Homemade Cold Press Coffee and Meals for 3/2/16

One of my favorite things to put in my morning Shakeology is homemade cold press coffee. When Ryan and I discovered and fell in love with cold press it was from Starbucks in a fairly expensive yet small container. For a few weeks (months?) we used that until he (the genius he is!) found a recipe by one of his favorite people- The Pioneer Woman.

The set up and process is actually extremely basic and easy! Here's the recipe from the source.  Ryan bought a kitchen sized container like she shows, a funnel and we buy cheap coffee from Target or another source- dark roast.

Mix 1lb coffee per 8qts water- make sure all the grounds  have touched water and are well mixed. Let it sit for at least 8hrs but we've let ours sit for, oh, around a week and it's turned out just fine.

Once you're ready to strain it set up a large funnel balanced on whatever vessel you are using (growlers work great!). Set a colander inside the funnel and layer 2-3 sheets of cheese cloth to help strain the grounds out. Slowly pour the coffee into the funnel and let it fill!

This method is almost stupid easy and amazing by itself, add to your morning shake or sass it up with some creamer/sugar/syrup like The Pioneer Woman! It is almost ridiculous the admiring looks you'll get when you say "Oh, I make my own cold press"- feel free to clue your friends in, if you'd like.

Meals for 3/2/16
Breakfast- Vegan Chocolate Shakeology, spinach, frozen raspberries, cold press coffee (1 red, 1 green, 1 purple)

Lunch- Two corn tortillas, stew beef marinated with taco seasoning, oven baked peppers, onions and brussel sprouts, 1/2 a blue of shredded sharp cheddar, dollop of plain greek yogurt. (containers- 1 yellow, 1 red, 1 green, 1/2 blue)

Dinner- Ate at my in-laws! Delicious chili, 1/2 a slice of cornbread, some tortilla chips, oyster crackers and some shredded cheddar. Definitely more carbs than I usually eat with a meal but it was so good! ;) (Probably evened out to be 1 red, 1 green, 1 1/2 yellow, 1/2 blue)
